How to make a salad from an almost empty fridge!

Ever have a day when you’re staring into the fridge wondering what to have for lunch/dinner - and think maybe cheese and crackers is all that you have that is fast and easy? You know you want to nourish your body with all the goodness but just don’t have the time or the ingredients to hand?  Well this is a salad to show that you can make a delicious, beautiful, nutritionally powerful meal out of virtually anything. 

The only cooking I did for this salad was to quickly steam the sweet potato.  All the other veg were leftovers from dinners earlier in the week… I have learned to always try and cook extra veg - which I use in a frittata which I regularly make for breakfast, or as you see here in a salad.    You might not typically think of sweet potato, leeks and purple sprouting broccoli as salad ingredients - but trust me they’re delicious!

Not only was the super speedy - it is fancy enough to share with friends, and packed with nutrition - from the phytonutrients from all the colourful veg, heathy fats from the smoked fish and walnuts, and fibre from the veg.  I made a quick dressing from the bottom of a yoghurt pot (my son always leaves a scraping - and always puts the ‘empty’ pots back in the fridge), a squeeze of lime (the greengrocer had them on special offer last week) and some olive oil and seasoning.  Add a drop of maple syrup if you find that too sour.
