Lemon tahini dressing

I created this thick luscious dressing for a Client who wanted some lemon inspiration.  Since making it I've enjoyed it on a salad of roasted vegetables with a toasted seed topping, and on a plain green salad.

Either way it just rocked - and made what could have been unimaginative dishes just sing.

You could also make it thicker and have as a tasty dip for some veggie crudités.

And if you're peri/menopausal you'll be getting all the benefits form the sesame seeds in the tahini (they're phytoestrogens) and the fibre, antioxidants, calcium and a host of other minerals..

Lemon Tahini Dressing

All you need:
• 1 tbsp tahini
• 2 tbsp olive oil
• Juice ½ lemon
• Handful herbs
• 1 tsp peanut butter
• Optional ½ crushed garlic clove
• Water to dilute
• Dash maple syrup / honey (optional)
• Salt and pepper

All you do:
1. Mix the tahini with the lemon juice until you have a thick paste
2. Slowly mix in the olive oil – stirring if it starts to separate
3. Finely chop a handful of fresh herbs – I had a mix of marjoram and chives and stir these into the dressing
4. Dilute to the desired consistency with water and season to taste, adding a dash of maple syrup or honey if wanted.
